Humble Apple CoCo Crumble
I am addicted to this humble crumble! Eat it for breakfast, lunch, dessert or a snack! Easy to make for on-the-go people and busy mums looking for something yummy to eat.
2-3 apples (alternatively you could use pear) core removed and sliced water For the crumble: 1 cup rolled oats or for a gluten free option use quinoa flakes 1 cup banaban coconut crunch 1 tablespoon of cinnamon (use ginger if you use pears) 3 tablespoons of banaban coconut oil 2 -3 tablespoons of sweetener – rice malt syrup, honey, agave or maple syrup 1 handful of macadamia nuts - halved 1 handful of walnuts or pecans – halved *Optional – sometimes I add ½ cup of LSA (Linseed, Sunflower and Almond mix)
Preheat the oven 180°C 1. Place the apple or pear in a dish or pan, add a little water – put in the microwave or on stove and cook till soft. I put some glad wrap over the dish so the apples/pears are steamed and become soft 2. Place the apple or pear in a small baking tray (spray tray with Pro Chef coconut oil spray) 3. Prepare the crumble 4. Place rolled oats, coconut crunch, LSA (if using) cinnamon, coconut oil and sweetener in a food processor. Pulse until combined 5. Add the nuts and stir in Serve Serve with a dollop of Co-Yo Coconut Yogurt or your favourite - I sometimes use Jalna Pot Set Vanilla
