Blueberry and Coconut Ice Cream

Blueberry and Coconut Ice Cream

2 1/2 cups fresh or frozen blueberries

3/4 cup Banaban Organic Coconut Sugar

3 cups Banaban Organic Coconut Milk

1 tsp vanilla extract


1. In a medium saucepan, combine the blueberries and sugar. Bring to the boil over medium heat. Mash the blueberries with a wooden spoon or fork and simmer for 5-6 minutes

2. Remove from heat and cool for 10 minutes

3. Combine coconut milk, blueberry mixture and vanilla extract in a blender. Cover and store in fridge for 2 hours to chill

4. Pour the mixture into an ice cream churner and freeze overnight
