Ingredients

For the Crust

1 3/4 cups almond meal

3 tbsp Banaban Extra Virgin Coconut Oil, melted

3 tbsp Banaban Organic Coconut Sugar

For the Quiche

5 eggs

1 cup baby spinach

1/2 onion, diced

1 cup mixed frozen veggies

1 clove of garlic, minced

1/2 cup Banaban Organic Coconut Milk

1/2 tsp baking powder

Method

1. Preheat oven to 180C

2. Line a pie dish with baking paper or a little coconut oil

3. In a large bowl, combine almond meal, cocobnut oil and sugar until well combined. Press into prepared pie dish and bake for 10 minutes

4. Remove from ove and allow to cool slightly

5. In a large bowl, combine eggs, coconut milk and baking powder

6. Fold in spinach, onion, garlic and veggies

8. Pour into prepared pie crust and bake for 30-50 minutes

9. Remove from oven and cool slightly before serving
