Roast Pork with Coriander and Cashew Dressing

1/2 can Banaban Organic Coconut Milk

Grated zest of 2 limes

Juice of 2 limes

1 tbsp Banaban FIJI Curry Powder

2 tsp Hungarian style paprika

6 garlic cloves, crushed

3 tbsp crushed ginger

Salt and pepper to taste

1kg pork tenderloins or 1kg pork roast

2 tbsp Banaban Extra Virgin Coconut Oil

4 green onions, finely chopped

1/4 cup coriander, finely chopped

1/2 cup coarsely chopped cashews



1. Combine the coconut oil, coconut milk, lime zest, lime juice, curry powder, paprika, garlic, ginger, salt and pepper in a bowl

2. Add the pork and coat with marinade

3. Cover and refridgerate for atleast 2 hours or up to 8 hours

4. Heat oven to 150C

5. Place pork on a lined baking tray and cover with marinade

6. Bake in oven for around 30-40 minutes (until an insterted thermometer reads 150C)

7. Remove pork from the oven, cover loosely with foil and set aside for 10 minutes

8. Combine the green onions, coriander, and cashews in a bowl and season with salt

9. Scatter the coriander mixture over the top and slice pork into 1/4 inch slices

10. Serve!
