Paleo Salmon and Spinach Quiche

Tip; To create this as a traditional quiche, you can add a pie crust and some cheese on top!

5 large eggs

1 1/2 cups fresh spinach, chopped roughly

2 fillets fresh salmon, diced

1/2 medium brown onion, diced

1 clove garlic, crushed

1/2 cup Banaban Organic Coconut Milk

1/2 tsp baking powder

Salt and pepper to taste


1. Preheat oven to 180C

2. In a large bowl, whisk the eggs and coconut milk together

3. Slowly add in the other ingredients while continuing to whisk

4. Pour mixture into a greased pie dish and bake for 30 mins or until cooked through the centre
