Cauliflower and Tofu Coconut Curry

Ingredients

1 cup Banaban Organic Coconut Milk

2 Tbsp Banaban Fiji Curry Powder (Medium or Hot depending on taste)

Salt and pepper to taste

1/2 large red onion, diced

1 medium garlic clove, crushed

1/3 cup water

300g firm tofu, drained and patted dry with paper towels

1 cup green beans

1 1/2 cups cauliflower, cut into tiny florets

1/3 cup cashews

Handful of fresh coriander, roughly chopped

Method

1. Bring half of the Banaban Organic Coconut Milk to a simmer in a large skillet or heavy based pot over medium-high heat

2. Whisk in the Banaban Fiji Curry Powder, salt and pepper

3. Stir in the chopped red onion and garlic and cook for a minute

4. Add the remaining coconut milk and water, then add the tofu

5. Cook the liquid down for a couple minutes before adding the green beans and cauliflower. Cover and simmer for about 1 minute.

6. Remove the pot from heat and stir in the cashews

7. Serve with a garnish of fresh coriander!
