Coconut Chicken Soup

Ingredients

3 cups chicken stock

1 small piece of fresh ginger, sliced

1 cup Banaban Coconut Milk

1 tbsp. Banaban Amino Seasoning

2 tsp. Banaban Coconut Nectar

500g chicken

1 cup mushrooms, sliced

1 medium carrot, julienned

2 tbsp. lime juice

¼ cup coriander, (stems and leaves) chopped finely

Method
  1. In a pot, bring chicken stock and ginger to a boil, then reduce heat to low and simmer for 5 minutes.
  2. Stir in coconut milk, amino seasoning, coconut nectar, chicken, mushrooms and carrot.
  3. Simmer for a further 15 mintues.
  4. Just before serving, stir in lime juice.
  5. Serve.
