Coconut Chicken Soup
3 cups chicken stock
1 small piece of fresh ginger, sliced
1 cup Banaban Coconut Milk
1 tbsp. Banaban Amino Seasoning
2 tsp. Banaban Coconut Nectar
1 cup mushrooms, sliced
1 medium carrot, julienned
2 tbsp. lime juice
¼ cup coriander, (stems and leaves) chopped finely
- In a pot, bring chicken stock and ginger to a boil, then reduce heat to low and simmer for 5 minutes.
- Stir in coconut milk, amino seasoning, coconut nectar, chicken, mushrooms and carrot.
- Simmer for a further 15 mintues.
- Just before serving, stir in lime juice.
