Apple and Egg Muffins
The prefect breakfast to prep ahead for if your in a busy rush throughout the week!
3 large green apples, diced
3 tbsp. warm water
2 tbsp. Banaban Coconut Nectar
2 tsp. cinnamon
1 ½ tbsp. Banaban Virgin Coconut Oil
3 tbsp. Banaban Coconut Milk
1 ½ tbsp. Banaban Coconut Flour
¼ tsp. baking soda
1. Sautee the apples, water and 1 ½ tsp cinnamon, Coconut Nectar and Coconut Oil until the apples are the consistency of chunky applesauce.
2. Set aside to cool
3. In a medium bowl, whisk the eggs, Banaban Coconut Milk and Banaban Coconut Flour, ½ a tsp of cinnamon, baking soda and salt until well combined.
4. Add in the cooled apples.
5. Spoon mixture into a lined muffin tray and bake for 40 mins at 180 degrees.
